These are amazing muffins which take only minutes to make and keep really well in the fridge, though I’ve never had that problem of them lying around for more than a few days.

keto vanilla almond muffins

Muffins:

  • 3/4 cup almond flour
  • 2 tsp baking powder
  • 1 tbsp Xylitol
  • 1/4 cup melted butter
  • 1 tsp pure vanilla extract
  • 2 eggs
combine all dry ingredients and then mix in wet ingredients. pour into 6 silicone muffin liners and bake for 15 minutes at 350 degrees.

Cream Cheese Keto Icing

  • 1 package cream cheese softened to room temperature
  • 1/2 cup of butter softened
  • 2/3 cup powdered erythritol
  • 1/2 teaspoon vanilla extract

combine cream cheese and butter until well mixed, add vanilla extract and slowly add erythritol.
